This is a delicious home made cake with high health quotient and satiation. We have added jaggery to make it just enough sweet. You can make it without jaggery or add some more per your preference.

Sweet spices nutmeg and cinnamon add to the health benefits, taste, and aroma of the preparation. You can replace zucchini with other sweet veggies or gourds to make different variations of the cake.

Zucchini Cranberries Cake Recipe

This cake recipe is packed with all the required macronutrients and micronutrients in one meal. It is kids friendly and goes well for sides, snacks, and desserts.

Ingredients

  • 1 cup Grated Zucchini with peel You can replace zucchini with carrots, winter-melon, ripe cucumber, or fruits of your choice. For zucchini, you wouldn't need to add any more water or milk. However, if you are replacing it with or adding other ingredients, then change the quantity of water|milk and semolina a little to get the right mix for baking.
  • 1 cup Semolina
  • 1 cup Almond Flour you can make yours at home by grinding blanched almonds
  • 2 eggs
  • ½ cup Dried Cranberries
  • ½ tsp Nutmeg Powder
  • ½ tsp Cinnamon Powder
  • 1 pinch Rock salt
  • Âľ cup Jaggery or raw cane sugar
  • ½ cup Pure coconut oil or unsalted butter or ghee

Instructions

  • Mix all dry ingredients together.
  • Add eggs and grated Zucchini. Mix well.
  • Keep the mixture aside for 15 mins.
  • Preheat oven to 180 C and add cake mix on the tray.
  • Set the tray in the oven and bake for 35-40 mins. Keep checking in the middle.
  • After 35 mins, check again by poking a toothpick or fork. If it comes out clear from all sides of the cake, then close the oven and let it cool down.
  • Serve with flower tea or have it as a dessert.

Notes

Notes: To make an eggless version. Replace eggs with 1 tablespoon vinegar, 1 teaspoon baking soda, and half a cup of milk.
Dried cranberries usually have high amount of sulphites, oil, or sweetener (glucose syrup) on them. So, make sure that either cranberries are without above mentioned. Or you can soak cranberries in warm water for sometime and then discard that water to get rid of the additives to some extent.
Replace cranberries with any other berries or raisins.
Replace semolina with wholemeal flour with this. Equally mix wholemeal flour such as buckwheat flour or ragi flour in the all-purpose flour for a wholesome version of the banana bread.
