Ghee is butter that has been processed to remove the milk solids. Itʼs basically butter oil. It is also known as clarified butter or Desi Ghee in the Hindi language.
A tablespoon of ghee contains 120 calories The casein and whey proteins are removed with the milk solids. So the people with lactose intolerance can consume ghee.
This recipe of ghee making from unsalted butter is super easy and quick to make pure ghee. Thus, it will save you money and give you the comfort of making as much as you need.

250 Grams Unsalted Butter
Method of Preparation
- Cut the butter roughly; Put the butter in a saucepan. Turn the heat to medium-low.
- Keep stirring until butter melts.Use wooden or stainless steel spatula. After the butter melts, it will start to bubble and yellow foam will start to form on the surface.
- Keep heating on medium-low heat.
- Continue to cook the butter until it turns clear and the milk solids sink to the bottom. It will take ~10 minutes, depending upon your pan size and quantity of butter.
- IMPORTANT POINT: Do not heat it for a long time, ghee may burn. So as soon as you see milk solids are forming and sinking at the bottom of the pan, switch off the heat and let it cool down. Check with a spoon, if you see ghee is not clear and milk solids are not pinkish-brown then heat the ghee again for 2~3 minutes.
- Line the sieve with cheesecloth and place it on a glass jar or a bowl.
- Strain into the jar or bowl after ghee cools down to a room temperature. Store the ghee in a sealed glass jar.
- Cool and store the jar at room temperature or refrigerator
Notes
- Add a teaspoon of ghee over dal (lentil curry) and rice.
- Add a teaspoon of ghee on hot rice, sprinkle salt, and few drops of fresh lemon juice. Mix and eat, my kids love it.
- Make an omelettes, parathas, rice dishes (especially biryani), beans/lentil curries with ghee. It tastes amazing.
- We spread it on a slice of bread to make a toast on a frying pan.
- Most of the sweet dishes of India are made with ghee.
- Ayurveda recommends cooking and frying only in ghee. But I do use vegetable oil, olive oil, mustard oil, coconut oil, and sesame oil depending on the recipe.
- It is always better to use different types of oil. Have ghee with hot milk at night before going to bed—it will help you with your constipation problem.
